We jumped… and we’ve landed!

The first step is always the hardest… But we did it! We’ve opened at our new location 7255 South Havana Street, #110, Centennial CO 80112. It took 4 months of planning, permitting, and construction. Our new hood is 11 feet long and weighs 800 pounds. We have two ovens. More mixers. More products. We opened in a blizzard which seems auspicious, everything new, and clean, and white. (Maybe a little too much white but who’s to say?) WHAT’S NEW? Everything remains gluten. dairy, soy protein and peanut free.  We’ve expanded the grab-and-go section to include sandwiches, salads, baked russet and sweet potatoes, and our 8 second flatbread with the NEW ‘ranch’ dressing. In addition to the ‘ranch’ dressing, I’ve been working on a sundried tomato artichoke spread, a ‘honey’ mustard sauce (using agave), and perfecting our chipotle aioli sauce! We’ve got the first batch of croutons coming out for the salads. WHERE HAVE WE BEEN? In August 2105 we moved out of the Tamarac location without a new space. It was a little stressful. Our equipment went into 4 months of storage. Every table and shelf was broken down and packed. The cases, the frig’s, the oven, EVERYTHING was wrapped in huge amounts of bubble wrap and packed into storage pods. Picture us cramming the 11 foot three compartment sink into a storage pod! The hood and excess equipment spent the months in my garage. (Thank you to my family for bearing with me. It has been a crazy time.) Our vendors waited. Our customers paced. And my staff, my wonderful staff, has worked terrifically hard to get us broken...

How is the new space? Come and see!

Time is passing, the next step is coming… We are passing through the harvest and traditions filled with symbols and moments of abundance, family, and gratitude. But there are still those who feel alone or who seem lost to love. Hold up a symbolic ‘candle’ of hope. Look someone in the eye; give ‘em a wink…it’s free. Thank you’, ‘excuse me’ take only a moment. If a smile can melt a heart, what could a kind word do? Don’t be perfect, be human. Why the moment of waxing poetic here at The Gluten Escape? We’ve hit some turbulent waters. I thought we’d gotten through these issues with permitting but the site inspections last week did NOT go well. Maybe it’s the Holiday. Maybe it’s the high fructose corn syrup. Maybe it’s me (two weeks ago I had another neck surgery)…but GOSH DARN IT people don’t understand our food and the bakery. (What do you make? What’s in that? How do we know you don’t fry? Why don’t you have grease? How is that possible? ) In these moments I have to step back, to stop and look for what I can do, in front of me now, today. And AHA, I know. With a cheerful heart I’m stepping out to announce (drumroll, bells, cymbals, please)… THE BLESSING OF THE NEW BAKERY On December 5, at 11 a.m. come celebrate with us as we pray, cheer, chant, sing, and dedicate the new bakery!   We will celebrate the abundance of ingredients on this earth, the health and welfare of our community, the many blessings we have, and the challenges we face....

Thanksgiving strategy

Dear Tribe, We know Thanksgiving is just weeks away and we are racing to be open. We love making traditional holiday foods for ‘you and yours’ especially stuffing, dinner rolls, and pies. It’s difficult to know when we will ‘formally’ reopen our doors, but we’ve passed all our inspections so far and the crews are working overtime (and Saturdays)! If you are nearby stop in and thank Dustin, our project manager from Aberdeen Construction, and the hardworking subs. We’ve decided to think positive and will be producing (1) packs of stuffing cubes, (2) take-and-bake dinner rolls, (3) pies, and (4) cranberry or pumpkin muffins. As a community, we need to gauge demand, so we are going to start taking orders now. (We will stop taking orders at some point in time.) If you want/need any of these items please email Kathy at theglutenescape@gmail.com with your ‘wish list’ order and include your phone number. We will call each of you back for payment info….Once we have payment information, and only then, is your order final. WE WILL NOT CHARGE YOUR CARD AT THIS POINT IN TIME… We will take as many orders as we can. Let’s see how we do with this system and we’ll keep in touch on the website and Facebook. As far as costing, if we are open for business the items will cost our ‘standard holiday preorder’ prices (herbed cubes $4.99, take and bake rolls $8.99, frozen pie shells $7.99, apple pies $15.99, pumpkin pies $12.99, 2 pack medium muffins $5.25). If we are not yet formally ‘open’ with a tax license and final City approval...

Yup, ANOTHER giveaway (10/22/15)

Come see our progress, donate to a great cause, and grab a treat. Yes it’s true! This Thursday, October 22, 2015 we’re doing it AGAIN. Make a donation for The St. Francis Center at our new address (*), and grab a dough ball and a muffin or two. We’ll have rosemary dough balls, and pumpkin or chocolate chip muffins…. They are gluten free, dairy free, peanut free, soy protein free, and egg free. (Oh, and this batch is corn free also.) We’ll start at 10:30 and stay until 12:30.
